87.2% Your favourite base malt
5.8% Caramel Pilsner
3.5% Your favourite light caramel
3.5% Raw Wheat
Mill to desired consistency (according to your kit)
Mash in 63C for 45 minutes. Step to 67C for a further 45 minutes.
Mashout to 76 (or sparge at 76) DON'T allow this to get any warmer than 76.
If you adjust your mash and sparge water a ratio of 1:2.5 (Cl:SO4) is desired. We use CaCl and CaSo4.
Boil to preffered length (our standard is 60 minutes, very vigorously) As always take precautions to ensure your own safety.
FWH addition of 25 IBU Chinook
20 Minute addition of 5g/L equal amounts of Colombus, Centennial and Cascade
WP Addition of 5g/L equal amounts of Colombus, Centennial and Cascade
Dry Hop Post ferment but before cold crash of 5g/Litre equal amounts of Colombus, Centennial and Cascade
Ferment with a clean fermenting strain such as US05. 18C
