DB 12 month Barrel Aged Russian Imperial Stout 12.5% : Our RIS brewed in honour of Indy, our perpetually dirty brewery dog. This iteration has spent a full 12 months in barrel with adjuncts added, creating a truly decadent drinking experience. Ross “Pours thick and black with a crème coffee head, aromas of dark choc and roast coffee, layered with redberry and oak. It Tastes deceptively/dangerously smooth. Dusty dark choc with oak vanillins and red wine tannins.”
Feijoa Sour 5% : This barrel fermented saison has been a labor of love, a “nine month” labor to be exact! The feijoas underwent a lactic ferment before being added to the barrels. Once secondary fermentation was complete, we blended the feijoa barrels with our house perpetual sour culture just prior to bottling. A further 3 month conditioning period has allowed this to develop into the beer it is today. Ross “Golden amber with a light haze, green feijoa, funk and citrus on the nose. Forward acidity with more feijoa and a crisp tart finish. Overall its medium bodied and lightly carbed. Great now but will also continue to develop for many years.”
Devine Goodtimes 2019 8.5% Chardonnay barrel aged Brett Saison: A collaboration that has people, sharing and celebration in mind. After months ageing in Chardonnay barrels, Devine Goodtimes 2019 was bottle conditioned for 10 months with Brettanomyces and Lambicus yeast resulting in an elegantly fine, Champagne-like carbonation, through which an array of lemony tones and subtle funk arrive, with Chardonnay oak providing light textual elements. This is a very cool beer, and one which will continue to evolve with careful cellaring, but for those who can't wait, Devine Goodtimes 2019 pairs well with long lunches, charcuterie boards and warm laughter.
