Pour: Opaque jet black with deep ruby edges and a thick mocha-brown foam.
Smell: Espresso, dark chocolate ganache, vanilla bean, ripe blackberry, plum compote, and warming Shiraz character.
Taste: Huge layers of roast, cacao, burnt toffee, dark fruit, and silky oat-driven richness balanced by subtle coffee bitterness and red wine complexity.
Finish: Full-bodied and velvety with lingering dark chocolate, espresso roast, sticky dried fruit with a slow warming finish.

The longest nights deserve the biggest beers.

As the winter solstice creeps closer, the darkness signals it’s once again time to unleash a new edition of DB. IYKYK this is less a beer and more a sacred ritual for us here at Rocky.

DB day begins with an enormous mill-in featuring our Certified Sustainable local house pilsner malt from Tolga Farms, followed by heritage British Maris Otter, malted oats, double-roasted crystal malt, and chocolate malt, alongside premium German Caramunich and Carafa Special malts. The result is a dense, luxurious base dripping with dark chocolate, espresso crema, burnt caramel, and rich molasses depth.

From there, things escalate quickly. After an extended kettle boil to intensify richness and body, we flood the whirlpool with 200 litres of premium local Sangiovese and Shiraz juice from the legends at Settler’s Ridge, bringing layers of dark berry, plum, and subtle vinous warmth into the fold. Brewed across two consecutive days with a second wort addition to push gravity into absurd territory, DB 2026 is then conditioned on coffee, vanilla, and cacao husks for maximum decadence.

Massive, dangerous, and unapologetically overbuilt. This is winter in a glass.
