The Valkyrie rides again. Third time. She’s getting good at this.

Brunhilde is our Oktoberfest lager, and we brew her the long way because the short way doesn’t taste like this. Double decoction: we pull a third of the mash into the kettle, boil it, send it back, then do it again. Twice the work, one turn, a very long brew day, and a malt character you cannot fake with a bag of crystal.

That boiled mash is where the magic lives. Our Certified Sustainable local Pilsner malt and a measure of Melanoidin come out the other side with layers of fresh bread crust, toasted biscuit and honeyed depth, all without tipping into sweet. Noble Citra rides shotgun on the hot side only, bringing a gentle noble spice and a flicker of orange peel, then politely getting out of the way.

Deep gold, brilliantly clear, smooth as a stein-swinging chorus, and finishing clean and dry enough that the second litre feels like a good idea. Prost, you legends.
