Collaborations are at their best when they push you to step out of your comfort zone, and this beer is most definitely out of your average brewer’s comfort zone. Working on this Pacific Pastry Project with our new mate Chote, the master beer chef behind Samata Brewing in Bangkok, Thailand, has been incredible.
Tart Theory is inspired by Thailand’s legendary pandan desserts and is just the kind of bonkers pastry sour that Samata are known for. Pouring an unapologetically, Kermit-the-Frog green, this beer is packed with pandan in more forms than we honestly thought existed, infused at multiple stages throughout the brew. Literal buckets of milk sugar, custard powder, toasted coconut and vanilla create that creamy, nostalgic body.
Tangy sour meets creamy coconut custard tart with herbal pandan magic. Lusciously smooth, velvety and decadently thick, it’s all wrapped around a bright, tangy sour base that makes for a flavour journey that’s surprisingly refreshing and dangerously drinkable.
This has easily been one of the most boundary-pushing collaborations we’ve ever tackled. Huge credit goes to Chote and the team at Samata Brewing, whose creativity and deep knowledge of Thai ingredients took us on a journey of discovery full of new techniques and ingredients.
Beer? Maybe.
Science? Definitely.
