Odin had two ravens. Every dawn he sent them out across the world, and every evening they came back and whispered everything they’d seen. Huginn was Thought. Muninn was Memory. Together, they missed nothing.

Neither will you. Thought & Memory is a Bavarian Hefeweizen that has been sent out into the world and come back with stories. The base is classic: our Certified Sustainable local Pilsner malt, a big load of Wheat Malt and Rolled Wheat, and a proper weizen yeast doing the banana-and-clove thing it was born for.

Then the ravens go to work. Ella and Eclipse, two of Australia’s best, are layered through four whirlpool additions and two rounds of dry hop, stacking ripe apricot, peach, red berries and a hint of white wine grape over the top of all that soft, pillowy wheat. It pours a hazy pale gold under a towering white head, drinks light and spritzy, and finishes with a long fruity hum and barely a trace of bitterness.

The yeast came to us as a gift from Simon and Ryan at Froth Technologies, a couple of Kiwi legends we met at the NZIPA Challenge who propagate yeast with the same low-footprint obsession we brew with. Cheers, boys. This one remembers you.
